It's difficult to pinpoint what might be meant by "Indian Wars" noted on your ancestor's tombstone. That title could be used for some small, local uprising that doesn't make it into the general American history books.
Let's make a couple of assumptions. First that your ancestor was between 15 and 30 years old when he participated in the so-called "Indian Wars" you write of. Second, that your ancestor was a native of the southeast, judging from that fact that he's buried in North Carolina. (Both of these might be risky assumptions...but it gives you at least a starting point.)
So, with these assumptions in mind, I would imagine that the "Indian Wars" he might have participated in was the Seminole Uprising in Georgia/Florida 1817-1818. This conflict was led by Edmund Gaines, and later Andrew Jackson, who invaded Spanish-held Florida after the Seminoles refused to leave land between Florida and Georgia.
There was also the Seminole War in Florida 1835-1842, where General Zachary Taylor (and others) attempted to further dispossess the southern Indians of land and power...and also to recapture escaped slaves who had taken up with the Seminole.
There was also a regiment, called the Indian Removal Regiment, that was raised in North Carolina in 1838 to assist with the removal of the Cherokee from Georgia (known as the "Trail of Tears"). I don't see his name listed anywhere on-line, though.
You might want to look into the military records (federal and local militia) associated with these conflicts for your ancestor's name. You might also want to get hold of some local histories of North Carolina, South Carolina and/or Tennessee and read up on White-Indian conflicts in those areas. Good luck!
